Oatmeal Cookies

The next time you reach into the cookie jar, pull out a cookie that is not only good for you, but contains ingredients that won’t cause you to break the scale. These flourless and sugarless cookies get their natural sweetness from honey and applesauce, and texture from the oats and nuts.

Spruce up this recipe by adding raisins and even a dusting of cinnamon sugar before placing in the oven!

Dry Ingredients:

  • 2 Cup Oats
  • ½ Cup Walnuts, chopped
  • 1 TB Flax Seed
  • 1 ½ TB Chia Seeds
  • 1 tsp. Cinnamon

Wet Ingredients:

  • 2 Egg Whites
  • ½ Cup Unsweetened Applesauce
  • ¼ Cup Honey
  • 1 tsp. Vanilla

Directions:

In a medium mixing bowl, add all of your dry ingredients, except for the Walnuts and mix until combined. Then, in a separate bowl, add all of the wet ingredients and use a fork to mix, making sure the egg and honey is evenly distributed.

Once the wet ingredients are combined, pour into the dry mixture and thoroughly mix until all of the dry ingredients have absorbed the wet mixture. Next, place the whole walnuts into a small bag and use a mallet to lightly crush the nuts before adding to the batter. Afterwards, add the Walnuts by folding them into the batter.

 

 

 

 

 

Using an ice cream scooper, evenly place the portioned cookies onto a large baking sheet that is lined with parchment paper. Make sure there is ¾-1 inch of space between each cookie.

Bake the cookies in a 325-degree oven for 25 minutes.
