- 1 cup flour
- 2 tsp baking powder
- 1 egg
- 3/4 cup milk
- 1 Tb sugar
- 1/4 tsp cinnamon
- 1 tsp vanilla
- 1/4 oil or melted butter
My son LOVES pancakes, and usually they are a quick breakfast option. But let’s be real, most of the frozen store-bought pancakes are LOADED with bad ingredients, including high fructose corn syrup and other additives. This version is a classic with ingredients I’m comfortable with him ingesting. I make a batch and then place them in a container to freeze, then pop one out morning of and microwave for one minute.
Mix the above ingredients together, and then use a 1/4 cup measurer to distribute batter into pan or griddle. Cook on medium heat, two minutes each side. Serve and enjoy!
